Beer Cheese Dip

A staple at any RB (for those of you that do not know what RB is, it is a wonderful group of girls that I met online while planning my wedding that I still chat with daily) get together is beer dip. I have made it a couple of times for some get togethers with other friends and it is always a huge hit.  I made it a couple of weeks ago to take to book club and there was hardly any left. This is the easiest thing to make and is great to take to any social get together (or just to eat on your own).  I am not a beer drinker and I love this dip.

Beer Cheese Dip
Recipe from Simply Tasty

2 8oz packages of cream cheese
1 pack of dry ranch dressing mix
1/2 cup of beer (this time I used Bush light but I have also used Bud Light and Boulevard)
Shredded Cheese to taste
Serve with: pretzels, tortilla chips, carrots, celery....

1. Combine soft cream cheese, ranch dressing mix, and beer.


2.  Stir, the consistency will be weird, but just keep stirring. (I use my KitchenAid)


3.  When the consistency becomes thick and smooth add cheese.  Continue to stir.


4. Top with cheese to taste.

Here are some notes from Simply Tasty on this recipe.

+Don't use 2 packages of fat free cream cheese, the consistency of the dip just won't turn out right. If you want to cut calories try a package of light and a package of full fat.

+I use whatever beer I have on hand to make this. Usually that is Bud Light. I know people who've made it with Honeyweiss and Miller Light.
+Keep stirring the mixture until the consistency gets smooth. It will look a little funky at first, but it will smooth out.
+I think the best this to eat with this dip is pretzels.
